Homemade Granola

After a recent trip to a B&B I have been craving homemade granola. I read a bunch of recipes online and decided to combine them all to make my own version. This type of recipe is very easy to customize. Just take out or throw in whatever your heart desires!

Ingredients
  • 18oz oatmeal (old fashion NOT instant) 
  • 1 cup sunflower seeds
  • 1 cup chopped pecans
  • 1 cup chopped almonds 
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped dried apricots
  • 3.5 oz shredded sweetened coconut (about half a bag)
  • ½ cup vegetable oil
  • ½ cup maple syrup
  • 1½ cups honey
  • ½ cup brown sugar
  • 2tbsp butter
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp kosher salt

Directions
Toast oats, seeds, almonds, and pecans on a baking sheet for 15 min in a 350 degree oven. In a sauce pan, combine oil, syrup, honey, brown sugar, butter and spices and bring to a boil. Combine oat mixture, coconut and syrup mixture in a large bowl and stir until evenly coated. Spread on a baking sheet lined with a silpat or parchment paper and bake at 350 degrees for 20 minutes. Remove from oven and let cool. When granola is fully cooled, break into small pieces and stir in dried fruit.
